Tasting Notes

Two words…intriguing and exotic…
I have had the pleasure of creating wines from this extraordinary variety
in my previous wine life here in Martinborough and so to revisit this
iconic Southern France variety, that I might add, is experiencing a
revival, is pure joy….
Another two words…. adore and admire..
Both in synergy…adore for its flirtatious nature and admire for its
scarcity of production outside of its homeland, and for us only 300
bottles produced
The flirtatious nature is expressed in its distinctive and prominent gloss
in its viscous texture,
Soft lush flavours are carried upon a 6g/L residual sugar of succulent
and almost non relevant sweetness, of ripe peaches, musk and
honeysuckle, this is what makes for a wine that screams to be paired
with scallops or a chicken tagine with apricots and almonds on a saffron
rice…you would think that I’m the chef…but no I’m still only the crafter of
these beautiful grapes..

On the palate it’s generous and softly textured, yet beautifully in balance, with stone fruit, gentle citrus and a hint of spice carried by bright, natural acidity.
